Andouille cherry bounce preparation:
1. Layer alternately wild cherries and sugar in a gallon jar. Place plate on top of cherries inside the jar to weight them.
2. Cover and let stand until the next day, when there will be a quantity of syrup present.
3. Add wild cherries and sugar each day until the jar remains filled after standing overnight.
4. Cover, but don"t stir.
5. Place jar in pan as syrup might run over.
6. Store in cool place for six weeks.
7. Strain and add one quart whiskey.
8. Bottle and serve when a real treat is desired.
