Creme de menthe jelly preparation:
1. ea mint sprigs bring sugar, creme de menthe and water to a boil in a saucepan.
2. Stir constantly until sugar is dissolved.
3. Add pectin and boil 1 more minute, stirring constantly.
4. Remove from heat and skim off any foam.
5. Plunge sprigs of mint into boiling water for 1 minute and place a sprig in each sterilized jelly jar. Pour jelly into jars.
6. Seal withparaffin.
