Absinthe - Absinthe reached its peak of popularity and notoriety around the end of the nineteenth century and is now illegal not only in the United States but in Switzerland, the place of its origin. Absinthe is actually a green-hued cordial with aniseed (licorice) flavor. The ingredient that caused all the fuss was wormwood (actually deleterious only when taken in immense doses). Pernod, Abisante, Abson, Anisette, Ojen, and Oxygene are its modern, safe, respectable substitutes.

Absolut - A high quality vodka of Swedish manufacture, most commonly and appropriately taken unmixed. Now available flavored with lemon, blackberry, and peppers.

Acidity - The backbone of a wine; too much creates a tart, unpleasing taste and too little detracts from the character.

Advocaat - Dutch term for 'lawyer' is also the name of a Dutch liqueur made with egg yolk and brandy and flavoured with vanilla, among other ingredients.

Aerate - The exposing of wine to oxygen to bring out the bouquet.

Agave - A large plant indigenous to Mexico and a member of the lily family from which tequila is made. (See also Blue Agave below).

Age - Often this is used as a measure of quality. It is not always dependable, however, because ingredients are a factor.

Akvavit - A clear Danish spirit closely resembles vodka and whose name means 'water of life'.

Alcohol - Common to all liquor. Ethyl alcohol, spirits distilled from grain, grape, fruit and cane are most common.

Ale - Brewed from malt and hops. Usually stronger and slightly more bitter than beer. Color can vary from light to dark amber.

Amaretto - An after-dinner liqueur with an almond flavor that is made in Italy from apricot kernels. The original amaretto, Amaretto di Saronne, was first made in Saronne, Italy, in 1525.

Amarula - Amarula Cream Liqueur is a delicious blend of the unique flavors of the marula fruit including chocolate, caramel, and a hint of butterscotch.

Amer picon - A bitter French cordial, bitter, orange-flavored, made from quinine, spices, cinchona bark, oranges, and gentiam

Amontillado - A pale, dry sherry from Spain.

Angostura Bitters - A bitter made from a Trinidadian secret recipe (see bitters).

Anisette - A sweet, clear, aniseed-flavored liqueur, the principle ingredient being aniseed.

Aperitif - A French term referring to a light alcoholic drink taken before a meal to stimulate appetite.

Apple juice - Apple juice is the juice from the apple fruit. It is a common drink for children in the U.S. It is almost always pasteurised and can be bought in sparkling or still varieties. Due to the heavy equipment required to juice an apple, it is almost always commercially produced as opposed to easily juiced fruits like oranges or lemons. Fresh, unfiltered and sometimes unpasteurised apple juice is called apple cider in the U.S. Apple juice is also a common component of many cocktails.

Applejack - An apple brandy produced principally in the United States and France. A version produced in Normandy, Calvados, is of very high quality. Also known as "Jersey lighting" and "hard cider". Made from winter apples, a great deal of applejack produced in the Unites States is of the homemade variety, and thus of widely varying quality.

Aquavit - Scandinavian Vodka flavored with caraway, dill and other herbs and spices.

Arak - A spirit derived from the distillation of local produce in Middle East, India and Asia including coconut, date palms, rice and sugar cane.

Armadale Vodka - Vodka distilled from wheat and barley.

Armagnac - Brandy from the Armagnac region of Gascony, France. Distilled at lower proofs than most Cognacs, this brandy is considered second only to Cognac.

Aroma (bouquet, nose) - All refer to the scent of a wine. Aroma and bouquet are similar terms alluding to the strength and type of scent in a wine ( a spicy bouquet or a peachy aroma),while nose is a specific term meaning a strong and intense scent.

Aurum - Made in Italy, Aurum is a brandy-based liqueur which is flavored with oranges, and the golden intensity of its appearance is enhanced by saffron. Considered the forerunner of Goldwasser.
